Pistachio Pesto Flatbreads w/ Grilled Summer Squash

For the grilled veg, you’re aiming for about two pounds total. Though, it really depends on how vegetable heavy you want your flatbreads.

Bread flour is a favorite for the flatbreads, but all-purpose flour will work if you don’t keep bread flour on hand (there’s no need to buy it if you won’t use it).

If you don’t want to turn on the oven, the flatbreads can be fried on the stovetop to make for a fold over flatbread type situation. Simply grease a large skillet and fry rounds of rolled out dough until they start to puff up and the bubbles slightly blacken.
