Pinto Bean Burgers w/ Slaw

I made these as sliders for a girls’ night with some small brioche buns. I found my kids were more into them with the novel size as well. They are great in a bun but also atop a salad or with an egg in the morning. We love veggie burgers around here.

The burger mix can be made a day in advance and kept covered in the fridge for your make ahead moment for a busy night or vegetable bbq dinner guests.

For the chipotle aioli, I simple mix a small spoonful of the sauce from a jar of canned chipotles in with some mayo. It’s pretty warm, so add the chipotles to taste.

The yield is for 6 standard burgers or 10 sliders.
