One of our favorite recipes in the archives is the Roasted Carrot and Pesto Pasta. It doesn’t make sense on paper, but it somehow works. The char and chew on the carrot marries so beautifully with the bright zing of the basil sauce. Our pestos are more of a green sauce with a kick of lemon and lots of herbs.
Same idea here, just refreshed. Quick grilled zucchini, baby mozzarella, a bright green sauce you can use for days. Easy, summery, crowd pleaser. Perfect hot or cold.
