Pan Seared Salmon w/ Cashew Curry Sauce

If you do not stock coconut aminos, soy sauce or tamari are fine! Coconut aminos are a soy-free alternative and has a sweet flavor. I buy mine from Thrive Market, but they sell it at Trader Joes and most grocers these days.

If you have leftover sauce, it works well in an Asian noodle type salad, or just as a dip for veggies and crackers.

As for the salmon, we want the fish to hit hot oil to be sure we get a good crust. Don’t try to flip it until you see some color coming up the sides to show it’s cooking through. Others will say to start it skin side down, which I agree with if you eat the skin, which I do not, so I do it as written.
