We do need to think ahead on these because of the soak and dry. I don’t count this as dinner time, I can soak them while we’re doing homework etc. and they dry off while I’m getting proteins together and the oven is pre-heating. Doesn’t have to be perfect, but we do get a better crisp this way.
I fit the fries of two, standard sized russet potatoes on one rimmed baking sheet. It feeds us four, lightly. We’d like three potatoes, but then I need a second sheet, so I am going to give you the yields below and if you have hungry folks, or kids who love fries, I would double this! The leftovers reheat well to go along with the morning's scrambled eggs.
