Miso, Tangerine & Tofu Salad

At time of writing, we were in the height of sumo orange season. Usually, oranges can be hit or miss. Some are juicy, some are pithy. But Sumo Oranges have never let me down.

If Sumos aren’t available, this will work with 3 tangerines or ripe and juicy oranges. Really whatever you have on hand.

This is written with tofu, but I think the marinade should also work on chopped chicken thighs. For an extra crisp on the tofu, you can toss the drained chunks in about 2-3 tbsp. of arrowroot before roasting. It’s not a huge difference but it does add a bit more texture.

If you are a Trader Joes shopper, the kale, cabbage and sprouts can be replaced with two bags of their cruciferous crunch mix. Be sure to discard the stems and core pieces.
