You can use whatever ground meat you have on hand; turkey, chicken, or a combination as written.
If you don’t have breadcrumbs in your pantry already, I find that using 2 tablespoons of flour for every ¼ cup of breadcrumbs works well. If you prefer to hydrate the breadcrumbs before you start (which would allow you to skip the step where the mixture rests), combine the milk and breadcrumbs in a small bowl about 10 minutes before you begin.
Pair with a salad (maybe this one) and you’ve got a delicious weeknight meal.
