My mom has never considered herself a cook, but she made this dip all the time when we were younger and it was her go-to appetizer or beach snack. Formally known as “cowboy caviar”, we called it her “vegetable dip” and besides a lot of chopping, it is so easy. A crowd pleasing, no heat appetizer for the summer!
