Lemon Curd

This can be used to top pancakes, toasted sourdough or swirled on a loaf cake.
My little people and their pals are very into all the warm carbs, and as buttery as biscuits and croissants are, I still think they need a spread (sauce4evr). Make this while citrus is in abundance.
By personal preference, I do not like lemon curd super firm. I want it to move around a bit, so the timing and ratios are for something tart, sweet and mostly drizzleable.
If you cannot find Meyer lemons, a regular Eureka lemon is totally fine. It will just be more tart.
