These are less sweet than the lemon bar you may have grown up on. I have made Ina’s version for years, which to me, is the benchmark for all things good. I think 2 cups of sugar is a lot, so we changed a few things. The original also calls for flour in the filling, which we replace with arrowroot starch or tapioca flour to both keep them gluten-free, and because flour is tough to come by lately. You can find these at Whole Foods, Amazon, or Thrive Market.

If you aren’t gf, you can use regular flour in place of the GF.
