Is there such a thing as lunch soup? Because I love that this one felt light but could be bulked up. I like that bone broth gives more protein and body to the broth of a soup, so I usually reach for that now.
For those who want it to be vegetarian, a vegetable broth would be fine and you’d obviously skip the chicken or sausage addition.
If you don’t want to use wine, simply add more broth. If you want to save a dish, you could cook the sausage with the vegetables, but it browns less this way. You can pick if you want the extra dish, or the added texture.
