There are a lot of toppings here, so edit depending on your time! You can also prep any of the condiments in advance to save time. The tomato confit is welcomed here with pops of brightness, but ketchup is fine if you don’t have the time.

If you can’t find, or don’t eat lamb, you can sub out ground beef, turkey or chicken if it’s dark meat. Veg friends, you can use a large portobello! We wait to salt the outside of the burgers, rather than mixing it in, to help the lamb stay tender.

Just don’t skip the whipped feta. It’s also a great dip for oven fries. These are great sans bun as a salad or a bunless burger since there are so many flavors going on.
