Lamb & Pea Spring Spaghetti

A slow cooked bolognese is always welcomed in the cooler months, but a brighter and weeknight friendly version is more spring appropriate as longer daylight hours invite busier schedules. This recipe uses, but you can sub for ground beef or even Italian chicken sausage (just decrease the salt). This recipe has a delicious base made with tomato paste and your favorite, crispy white wine. The recipe calls for a cup of wine; drink the rest with dinner, or sub in a rich bone broth and a splash of vinegar in its place.
If you’re not lamb people, beef or turkey can work here if you expect a different flavor!
