Kale Salad w/ Roasted Veg & Crispy Prosciutto

A salad that can be a filling meal for lunch or dinner. I love a kale base because it keeps well, making it packable for the following day. Portions wise, I would say this fed two adults with some added protein and a small scoop for two kids who don’t want an entree salad for dinner.
Vegetarian folks - just skip the prosciutto. You could add cheese if you’d like more salty richness. A protein or bean addition could work here too!
