Kale Caesar w/ Grilled Spatchcock Chicken

When testing this recipe, we tried it with this cashew version from the archives. It’s slightly heavier than your traditional Caesar dressing and find that it’s especially lovely when paired with a heartier green, like kale. If you don’t want to make homemade dressing, there’s no shame in going the store-bought route. We love the Caesar dressings from Primal Kitchen or Follow Your Heart.

Spatchcocking can be intimidating but I promise it’s a lot easier than cutting a spine from a chicken sounds. Just make sure your kitchen shears are freshly sharpened, otherwise you’ll have one heck of a time removing the spine. It is not necessary! Marinating and grilling or pan searing chicken breasts or thighs is a great alternative.

If you don’t want to fire up the grill, you can use this method for roasting a spatchocoked chicken.
