Israeli Lentil Salad & Turmeric Cauli Bowls

Another good make-ahead dinner and lunch ideas with a sturdy salad that lasts for days in the fridge. You will have more than four servings of the lentil salad, so serve it alongside grilled and chopped chicken, hard boiled eggs, or roasted salmon for meals throughout the week.
I omitted nuts here as the first two recipes call for cashews, but I do believe this needs a crunch from a roasted almond or pinenut. If you don’t have an allergy, throw them in!
Kids may not dig this but I imagine they would eat components a la carte. One of my taste testers said the cauliflower tasted like “buttered popcorn.” While I disagree entirely, maybe that means it will pass with picky eaters.
Tomatoes are not the best this time of year. If you live in a cool climate, look for Campari tomatoes as they are usually less seedy and sweeter.
