This guacamole recipe was in our last cookbook and it's simple perfection so I am going to include it here. As all things go with Hugh, it is the time and detail you put into something that makes it great. The jalapeño must be super finely minced. Your avocados need to be the good ones — go to a farmers market in the spring/early summer, nothing watery and tasteless. I think of Ina Garten, and how she always suggests buying the best quality you can afford. You want to find the good avos for this!
This amount will go quickly, so scale up if needed but it's really only good within a day.
