We are going to take all the crunchy, sweet and delicious things of this season, and add in some croutons to make a filling, salad-leaning side situation.
We want to use good bread here! The croutons should be big enough to present well, but not too difficult to get in your mouth.
For prepping ahead, you can make the dressing and croutons in advance, as well as the roasted squash. You can then assemble everything in advance and toss it together on site if you’re taking this as a side to a dinner outside your home. A traditional panzanella has the bread absorbing liquid from the vegetables and dressing, so don’t worry about traveling with it all in one bowl.
