This can stand in as a vegetarian main, or side. For a weeknight dinner, simply add a protein of your choice. Grilled chicken or salmon would be great here. We are trying to keep summer meals simple, but you could expand this with grilled eggplant and peppers too!
The bread doesn’t save well, so if you need to make things ahead, keep the croutons separate.
