Grilled Peach Sundaes w/ Whiskey Caramel

We made this caramel for the date cake a few winter holidays ago, originally from the Gjelina cookbook and it is exceptional. It’s not too thick and has a boozy kick. If you do not drink, vanilla extract works well.
Make the caramel in advance and this is so speedy to throw together. No grill? Just bake the peaches at 475’ until tender.
