Squeeze in the last of it! Corn and zucchini are in abundance during the summer months. I can already see their availability dwindling, so let’s fit this one in before we pivot to fall foods. We’ll drizzle the corn and zucchini with a spicy, herby dressing and top them with some cheese. I could see this piled on a flatbread or served with grilled chicken, steak, or shrimp.
