Greeny Turkey Burgers

Occasionally, ground turkey can be really wet, especially with added veggies. We added a little bit of panko to help absorb that extra moisture, which you may be able to skip, depending on your turkey. It is easier to grate the vegetables on a large hole box grater if they are cold and then squeeze out extra water in a dish cloth or mesh strainer. You can sub in ground chicken, or your favorite veggie burger, but I don’t think all this works great with beef.
The sauce is basically our Aji Sauce, parred down to the amount you need here. It is so lovely on a burger! I would definitely double it. It makes a great slaw dressing with a splash of apple cider vinegar!
