Grapefruit Poppyseed Snacking Cake

The only saving grace of a long, cold winter is the bounty of citrus. While spring is just around the corner - I’m still turning to grapefruits and lemons while fruit is still bleak.
This can be made either GF or regular. I do think it’s possible to use 1 cup of almond flour and 1 cup of brown rice flour as a substitute for the AP flour. You will need to increase the baking powder to 2 teaspoons and really beat your eggs first.
If you don’t have poppy seeds, don’t fret. It will work just fine without it.
