Gingery Sweet Potato Stew

Another warm bowl with lots of warming spices. I generally like a stew even better the next day, but that didn’t apply here. The lentils and potatoes absorbed a lot of the moisture, so it was dry with a reheat. Add more broth if you’ll be enjoying this the next day.
I took inspiration from Anna Jones new cookbook, One Pot, Pan, Planet, and changed it to taste.
The greens will stay bright green after that first wilt and will dull in color after that. If you are making this in advance, save the greens and add them just before serving.
