French Toast w/ Rhubarb Strawberry Compote

You can do this with any bread, but day-old brioche has a great eggy, rich and classic texture. I leave the slices out on a wire rack the night before so they dry out and absorb more of the custard. You can also give them a really light toast in the morning if you don’t plan ahead.
This should make enough compote to garnish for four people. Double it if you’d like to have extra to swirl into oatmeal or scoop over vanilla ice cream. If you can’t get your hands on rhubarb, a mix of berries is fine!
