This recipe hails from vegetarian recipe queen Heidi Swanson. When I asked you all for recipe ideas, this one was mentioned by a member and it looked too simple to skip. If you don’t like olives, you can try oven dried tomatoes or prepared sun-dried in a jar. They have the bold, salty flavor we’re looking for.
I do like greens in my grain salads...which may just make them a salad with grains? But whatever, I like the crunch and freshness. Her original does not have extra greens but you can be the boss.
