Crispy Delicata Squash Salad w/ Pecan Crispies

There’s a salad at a restaurant in Seattle called “Southern Not Fried Chicken Salad” that is only on the menu from September through November. In place of fried chicken, the chicken is grilled and the whole salad is topped with savory panko crumbs, providing the same crunch with less breading. Since it is seasonal, it has chunks of roasted delicata squash - the perfect creamy counterpart to all of the crunchy bits.

We took out the chicken here for a vegetarian option, and it's just as filling! With creamy goat cheese, bitter radicchio, and buttery pecans, this is the perfect fall salad that checks all the boxes.

If you have a nut allergy, replace the pecans with ¼ cup more breadcrumbs. For the smallest pieces, pulse them in a food processor. Panko works as a time saver!
