Cornbread Waffles w/ Green Eggs & Proscuitto

This is partly inspired by shakshuka and partly influenced by the southwest so it’s truly a hybrid of a recipe. If you don’t have time to make the waffles, you can sub out for English muffins that are toasted.

We used this mini waffle iron but you can use whatever waffle iron you have, just operate as you normally would. I prefer a toastier waffle, so to increase the crisp, either pop them in the oven for 10 minutes at 375 or in the toaster before eating.

Masa Harina is available at most grocers or online. But let me tell you a quickie little secret, because I know everyone is tired of cooking, use a packaged cornbread mix, and add the jalapenos, herbs and cheese to the mix!
