Coconut Red Curry Meatballs

Though turkey was used here, you can’t go wrong with chicken, pork, or beef. Use whatever you have on hand! Pork was lovely, but the flavors of the curry don’t pop nearly as much as they do if you use poultry for the meatballs.

If panko isn’t something you keep on hand, rice flour or oat flour work well as substitutes. 1/4 cup flour in place of 1/2 cup panko does the job.

If you’d like your onions and peppers to have a bit more crunch, don’t add them to the sauce until you add the meatballs. As written, the onions and peppers soften considerably.
