You all requested more lunch ideas (things you can make ahead and save for a few days in the fridge) so here we are. I do like a little bit of mild spice, but just skip the jalapeno if that is not your preference.
I buy or roast a whole chicken most weeks, and use the meat to add to salads, enchiladas, an occasional casserole or the kid’s quesadillas. I used that here, but you can easily skip the chicken and replace it with 1 cup of cooked lentils or white beans!
Lastly, those who’ve been around awhile know I love a toasty nut on top for texture. I wrote them in as optional, a nod to our nut-free members. Or! The new plantain croutons from Trader Joes would give a little nut-free texture too!
