Our family loves a “day cake” - by that I mean, perhaps not a show stopping dessert for company, but something to go well with coffee or to have a slice of after school with a dollop of yogurt. Sweet of course, but not necessarily decadent.
The citrus adds both moisture and depth of flavor. The citrus is blended pith, skin and all; just be sure to remove any seeds. I do everything besides the citrus in a stand mixer; this recipe is so quick and easy!
