Chimichurri Steak w/ Asparagus Hash

If you don’t have a cast iron skillet, roast the hash in the oven. 425' for 20-ish minutes should do it.

If you want a more traditional chimichurri recipe, follow this one (sans the mayo). The method below results in a creamier chimichurri that doesn’t seep oil like the more traditional preparation methods.

Searing steak on the stovetop is my preferred cooking method but does produce quite a bit of smoke. Feel free to broil it in your oven, cook it on the grill, etc. I’ve used flank steak here, but you can easily substitute your favorite cut (would recommend skirt if you can’t find flank).
