Chimichurri Quinoa w/ Roasted Delicata Squash

You all love weeknight vegetarian meals, so here is another good one…that you can also add some grilled chicken, steak or salmon to.

My shortcut here is to buy a premade chimichurri or green sauce. Markets like Trader Joe’s, Sprouts and Whole Foods usually have them near the hummus or fresh salad dressings. The recipe also calls for the Bitchin' Sauce, but that can also be swapped for a store-bought option if you need. If you do make either from scratch, prepare them in advance to save time.

If you cannot find delicata squash (which I love because you can eat the skin), a butternut squash or sweet potato would be great alternatives.
