There’s few salads more satisfying than a taco salad. Usually loaded with taco meat, cheese, avo, pico, and lots of veggies, it checks all the boxes. Salty, crunchy, bright, refreshing.
This is a play on our taco salad and yields a similar flavor profile. Yet - it’s totally meatless. You can use frozen, thawed corn to save a step here.
Tip! If you have the time, I recommend peeling the chickpeas and discarding their skin. This helps things get extra crispy.
