Chicken Enchilada Meatballs

I’ve tried a dozen takes on enchiladas and their many variations. Insert enchilada meatballs! Inspired by the familiar concept of meatballs in marinara, these are green chile studded chicken meatballs topped with enchilada sauce and bubbly cheese. They are a weeknight friendly meal that could double as an appetizer for any upcoming watch parties you may be hosting. You can sub green enchilada sauce if that’s your preference. A taco seasoning blend can stand in for all the dry spices, just watch if you need to add your own salt or if it’s already included. If you have kids that don’t eat much, these could go down to 1 lb. ground chicken just fine with no other changes, or if you want leftovers, they can go up to 2 lbs. ground meat, but add an extra egg, breadcrumbs and a heavier hand with your seasoning.

If your family does a bit of heat, the chimichurri rice in the Trader Joes frozen section is great. Our archived Spanish rice recipe is so easy and can cook itself while you finish up the meatballs.
