Chicken Caesar Sandwiches

Cleo is our picky one, but she is usually up for Caesar-ed anything. I'll make the dressing when there are anchovies in the house, or Toby's is our favorite store-bought (locally from Sprouts). We are making some pounded, crispy chicken breasts as the work horse here, tossing some greens and parm in Caesar, and using a soft roll just toasted to hold it all.

Perhaps this is a packed lunch or a family friendly dinner, but it's your protein and salad in one pretty package.
