Cauliflower Fritters w/ Apricot Relish

Most of us are now well aware of the humble cauliflower’s transformative power. Its creamy and luscious interior and crispy fried exterior both get shown off in this recipe that the whole family will adore. Kiddos may want to skip on the tahini and apricot relish, but maybe not! Easy to accommodate a variety of palettes with this one.
This does have a few steps. Both the relish and tahini sauce can be made in advance, as can the cauli mixture if you want to just fry them up before serving. My kids don’t love a fritter plain, but put them into Hawaiian rolls or slider buns to pass as a sandwich. You will likely have a few leftovers which can be frozen and reheated in a 425’ oven until warmed through.
