I’m fresh from a text thread for our neighborhood Friendsgiving potluck and good vegetables are what many adults want to eat, and are least represented at the table. Maybe not everywhere, but often. The solution - have two salads! You have to balance the brown with color and freshness and acidity. Amen.
You could stretch this with some cooked wheat berries or more greens for a bigger group!
The dressing recipe is from Via Carota a la Food 52. I added a touch of lemon to preference.
