Cambozola is a bluey-brie so it’s extra creamy and just has the perfect kick of funk from some blue cheese. I will note that these are a little tricky to make pretty; I tried them with a full slice of prosciutto and with a half slice and they both are just perfectly imperfect. I crisped mine in a skillet, but if you want to work with toothpicks for easy sharing, I could see these being baked for 15 minutes in a super hot 450’ oven, flipping them halfway through.
