Butternut Squash & Kale Gratin

This is heavier than our normal fare, but a holiday meal invites richness! I am cooking a turkey and ham for the holidays, and I thought this would be a great vegetable side along with a crunchy salad. It would also be lovely with a whole roast chicken.
I used my Staub cast iron casserole pan to both sauté things and then to roast. I love this thing and appreciate that it goes stove to tabletop. You can also start the sauté and then move things to your desired baking dish that can also be used for serving.
