Ground chicken tends to be damp compared to other ground meats, and can vary from brand to brand. If you find the mixture is still damp after chilling, you can add a tablespoon or two of flour to soak up the excess moisture.

If you prefer a larger patty for your burgers, use 1 1/2 lbs. of ground chicken.

If you have extra bacon from making the bacon for the scones, crumble some bacon bits over the blue cheese.
