Brothy Beans w/ Burrata & Pesto

We are going to soak and cook beans from scratch for a super simple, vegetarian dinner. Some of the best beans come from Rancho Gordo, which some smaller, specialty markets sell, or you can order them by mail. You want the Large Lima or Royal Corona Beans. From a more conventional market, smaller whites, like navy beans, may be all that is available and those will absolutely work as well. I know we all don’t wish to mail order our dried beans :)

I call for 3/4lb. because I think that feeds four but do the whole pound if you like leftovers or have extra hungry people. They reheat beautifully! I added some baby spinach into my bowl but knew the kids wouldn’t love that addition.
