Blueberry Muffins

These are light and studded with probably too many blueberries. The recipe makes 10, which is perfect for a smaller crowd with not many leftovers.
A store-bought gluten free blend can also be subbed for the blend below, Cup 4 Cup is the most reliable in my experience.
WITH GLUTEN SWAP! They are written gluten free, but you can use AP flour in place of the gluten free blend, just use one egg instead of two.
