Cowboy Caviar had quite the moment last summer and for good reason. Aside from chopping, it requires minimal effort and lasts in the fridge for days. This recipe is for a winter/spring version, leaning on frozen fire roasted corn, but if you can find fresh corn where you are, simply swap the frozen corn for 3 ears of grilled, fresh corn. If you are not a tofu family, you can swap for chicken and use the same seasoning blend (minus the arrowroot), and grill it if you prefer.
