Apricot BBQ Chicken w/ the Simplest Slaw

This recipe is all about the sauce. Once you make it, everything comes together in a flash. You will also have plenty of leftover sauce to grill again later in the week, maybe plan for BBQ chicken pizzas another night or as a dip for crispy chicken tenders.
We want extra ripe apricots, so the sweetness comes through. If the apricots aren’t super flavorful, sprinkle in a bit of sugar. If you can’t find good ones, 1 cup of dried apricots, soaked in warm water, will do the trick! While there are many slaw recipes on the site, it's always good to have a simple version in your back pocket for a quick side that can accompany almost any meal.
Stir in the zest of one lime, maybe some fresh herbs, just after cooking the rice, for a little extra flavor bump.
