Almond Butter Brownie Bites

These are quick to whip up and can easily be made by hand if you don’t have a food processor (or don’t want to whip yours out). Use 215 grams of almond flour in place of the almonds and soak the dates in boiling water for 30 minutes then mash into a paste.

If your Medjool dates are dry, simply pit and cover them with boiling water for 20 minutes to soften them up.   Creamy almond butter is key. If you use the thicker stuff (like Justin’s) these bites will be on the dry side. You can use any nut/seed butter in place of the almond butter if almond isn’t your jam.   If you want to skip the scooping and press the mixture into a lined pan, that works too.   As far as sweetness is concerned, I’d say these bites are subtly sweet. They definitely lean more toward snack than they do dessert. If you’d prefer something on the sweeter side, swap some of the almond milk with maple syrup or honey.
