I asked for soup ideas on Instagram a couple weeks ago and someone suggested Alison Roman’s “The Stew” from NYT Cooking as something I’d enjoy. I read over the ingredients thinking, really? This simple? We all need easy delicious things, but I changed it because while the base was smart and simple, I wanted more flavor. I swapped in a small head of cauliflower for half of the beans. I also added half a jalapeno, coriander and lime, and included those below. You can up things as you wish. I always like to liberally salt my stews and stir in citrus just before serving.
