Winter Citrus Salad w/ Blackened Chicken

In the winter months, the produce options are a bit barren, and indulgence abounds. We use winter’s citrus bounty here to craft a refreshing and bright salad in December. We’ve made lots of chicken salads here, but the blackened spices on the chicken and the creamy goat cheese dressing really make this sing.
If you don’t like fennel, you can swap with cabbage.
