Sushi Style Tofu Bowls w/ Sriracha Crema

If you aren’t a tofu fan, swap out for chicken breasts or thighs cut into 1” cubes, and increase cooking time as needed. If you do have tofu people, this will likely make enough tofu for one meal, no leftovers. This is a great one for make-ahead as most of the work is in the chopping. Doing a double batch will help you cut down on time in future evenings too.

All of the contents here can be repurposed in a wrap or as a salad the next day. We are tweaking our cashew base sauce a bit here to spice it up. If you have little ones you can omit sriracha.
