
Summer Primavera Pasta w/ Burrata

I had a veggie pizza last week that had tons of summer vegetables on it. They were all chopped very small and had been roasted ahead of time, so the texture was perfect and the vegetables didn’t slide off. I tried to mimic the veg from that pizza here, but put it over some basil-buttered noodles and topped it all with Burrata for a creamy finish. So good and pretty enough for company!
You could mix the veggies in or put them on top. If you have picky kids, you may want to cut back on one zucchini and eggplant, or save the extras for an omelet! The "crispy crumbs" are optional, but I love some texture on pastas.
